Zo&#8217;n drie jaar nadat ze geplant zijn, beginnen cacaobomen te <strong>bloeien<\/strong>. Deze bloemen veranderen vervolgens in <strong>vruchten<\/strong>: de <strong>cacaovruchten<\/strong>. In de loop der maanden worden de cacaovruchten groter en <strong>veranderen ze van kleur<\/strong>. Ze zijn eerst groen, dan rood en tot slot geel.<\/p>\n<p>Na vier tot zes maanden zijn de cacaovruchten rijp en <strong>klaar om geoogst te worden<\/strong>. Om de vruchten van de cacaoboom te halen, gebruikt de cacaoboer een <strong>snoeischaar<\/strong> voor de vruchten binnen handbereik en een <strong>snoeimes<\/strong> voor degene die hoger hangen. De boer moet voorzichtig te werk gaan: hij moet <strong>de steel <\/strong>zo dicht mogelijk bij de cacaovrucht afknippen om de cacaoboom niet te beschadigen. Dat is belangrijk voor de volgende oogst!<\/p>\n<h3>Het pellen van de vruchten<\/h3>\n<p>In de uren na de oogst moeten de<strong> vruchten<\/strong> geopend worden om de kostbare <strong>cacaobonen<\/strong> eruit te halen. Dit wordt het <strong>pellen van de vruchten<\/strong> genoemd. De boer opent elke vrucht met behulp van een machete. Hij scheidt de <strong>verse bonen <\/strong>met de hand van het <strong>plantenslijm<\/strong>, het witte vruchtvlees dat zich aan de binnenkant bevindt. Dat gebeurt drie keer per week. Ze worden er op een zeil gelegd, zodat onze experts <strong>de kwaliteit kunnen controleren<\/strong>.<\/p>\n<p>Vervolgens worden de bonen <strong>gewogen<\/strong> en <strong>verpakt<\/strong> in zakken van tien kilo. De verse bonen bevatten suikerhoudend vruchtvlees, dat nodig is voor de fermentatie. Ze wegen gemiddeld drie keer meer dan de gedroogde bonen. Ze zorgt ervoor dat <strong>de aroma&#8217;s van de chocolade zich ontwikkelen<\/strong>. Ze verloopt in <strong>drie stappen<\/strong> en neemt ongeveer <strong>zes dagen<\/strong> in beslag.<\/p>\n<h3>Anaerobe fermentatie<\/h3>\n<p>De verse cacaobonen fermenteren twee dagen lang in <strong>houten &#8216;A&#8217;-kisten<\/strong> <strong>die bedekt worden met jute zakken en bananenbladeren<\/strong>. De aroma&#8217;s beginnen zich te ontwikkelen dankzij een <strong>natuurlijke chemische reactie<\/strong>. Er ontstaat een sterke alcoholgeur.<\/p>\n<h3>Aerobe fermentatie<\/h3>\n<p>Na twee dagen gefermenteerd te hebben, worden de cacaobonen <strong>gemengd<\/strong> en<strong> overgebracht naar een tweede kist<\/strong> &#8216;<strong>B<\/strong>&#8216;, voor nog eens twee dagen. Tijdens deze verplaatsing komen de cacaobonen en de alcohol die ontstaan is door het anaerobe fermentatieproces,<strong> in contact met zuurstof<\/strong>. De alcohol wordt zo omgezet in <strong>azijnzuur<\/strong>. De bonen krijgen een andere kleur: van wit naar <strong>paars<\/strong>.<\/p>\n<h3>Laatste fermentatie<\/h3>\n<p>Tot slot worden de cacaobonen<strong> gemengd in een derde kist<\/strong> &#8216;<strong>C<\/strong>&#8216;, en dat gedurende twee dagen. In de kist kan de temperatuur oplopen tot 55 \u00b0C! De kleur van de bonen binnenin verandert <strong>van paars in bruin<\/strong>.\u00a0<\/p>\n<p>Om de fermentatie te controleren, doen we een &#8216;<strong>cut test<\/strong>&#8216;. Hoe bruiner de binnenkant is, des te meer is de boon gefermenteerd. Als we vaststellen dat op 100 cacaobonen 10% nog paars is binnenin, <strong>mengen we ze voor een derde keer <\/strong>gedurende nog eens twee dagen.<\/p>\n<p>[\/et_pb_text][\/et_pb_column][et_pb_column type=&#8221;2_5&#8243; Afhankelijk van de toegevoegde ingredi\u00ebnten (suiker, melkpoeder, cacaopoeder en cacaoboter) ontstaat <strong>pure chocolade, melkchocolade of witte chocolade<\/strong>. Deze chocolade gaat in de <strong>conche<\/strong> en wordt vervolgens <strong>getempereerd<\/strong> om romig, glanzend en mooi knapperig te worden.<\/p>\n<p>Tot slot wordt de chocolade <strong>in een mal gegoten<\/strong>, zodat hij de juiste vorm krijgt: tabletten, eitjes enz. Zo&#8217;n drie jaar nadat ze geplant zijn, beginnen cacaobomen te bloeien. Deze bloemen veranderen vervolgens in vruchten: de cacaovruchten. In de loop der maanden worden de cacaovruchten groter en veranderen ze van kleur. Ze zijn eerst groen, dan rood en tot slot geel. Na vier tot zes maanden zijn de cacaovruchten rijp en klaar om geoogst te worden. Om de vruchten van de cacaoboom te halen, gebruikt de cacaoboer een snoeischaar voor de vruchten binnen handbereik en een snoeimes voor degene die hoger hangen. De boer moet voorzichtig te werk gaan: hij moet de steel zo dicht mogelijk bij de cacaovrucht afknippen om de cacaoboom niet te beschadigen. Dat is belangrijk voor de volgende oogst!
